Chicken Bacon Italian BBQ Pizza

As you may have noticed, I have been MIA recently! I have taken a brief vacation from the kitchen (mostly due to the heat and the many, many things we have been doing lately) and am happy to be back! It had been a while since I really cooked an entire meal or dessert and let me just say... it felt good. Strange, but good!

My daughter is officially a kindergarten graduate and gearing up for 1st grade. I honestly don't know if i'm ready to have a first grader! It was hard enough watching her go off on her first day of kindergarten, but now I have to sit back while she actually eats her lunch somewhere other than home! One thing's for certain, she's going to be an amazing 1st grader. She loves to read and write and she is extremely creative! She even won an award this month for Creativity. I couldn't have been more proud of her!

Now that she's home for the summer, I think we're going to be spending a lot of time in the kitchen! She loves to help with dinner and loves to bake, so i'm sure we'll be whipping up some amazing stuff over the next few months!

This pizza recipe here is simply amazing. I have been on a pizza kick for a while now and love to make up new combinations for our pizzas. I like to think of this one as the Italian Cowboy of pizzas.

Chicken & Bacon Italian BBQ Pizza Recipe:   |Print Recipe|
4 chicken thighs (cooked, meat removed)
6 slices bacon (cooked, cut into small pieces)
2 onions (sliced thinly)
2 tablespoons butter
2 tablespoons oil
2 tsp worcestershire sauce
12 ounces mozzarella (shredded)
1/2 cup bbq sauce
1/2 cup marinara sauce
1 tablespoon dry basil
1 tablespoon italian seasoning
salt & pepper
Your choice of pizza dough. (You can use your own homemade version or a store bought!)

Over medium heat, place butter and oil. Add onions and sautee for 4-5 minutes, or until onions are translucent. Add worcestershire sauce, season with salt and pepper and combine. Remove from heat.

In a small bowl, combine marinara sauce, bbq sauce, basil and italian seasoning. Mix well.

Spread pizza crust with 3/4 sauce mixture. Top with cooked onions, chicken and remaining sauce. Cover with mozarella cheese and sprinkle bacon over the top.

Bake according to your crust's directions. Make sure the cheese is melted and bubbly and the crust is cooked to your liking.

  1. I can't wait to try this but will probably wait until the weather cools down and I can turn on my oven. How about some exciting things that we can make on the grill?? Is it possible to cook a pizza on the grill?? I have wanted to try but had second thoughts. What do you think??
