Happy Wednesday! There's something so exciting to me that it's already Wednesday! Probably because the week is just flying by thanks to Memorial Day! Also, I know we're getting closer to my little girl finishing up school! I can hardly believe she's almost done with 1st Grade already. She can hardly believe she's going to be a big 2nd Grader next year! She's already telling me how much work she will have and how "serious" 2nd Graders have to be.
Baby boy is almost 4 weeks already and he says he's completely ready for his big sister to be on summer break! It's so much fun seeing the two of them together. I knew my daughter was going to be an amazing big sister but I didn't realize she would be more amazing than I even thought! She's so loving and helpful and sweet to him. It melts my little heart.
This past weekend was probably one of my favorite weekends in a long time! We were all so thrilled about the 3 day weekend and getting to spend time together, so what did we do? We ended up spending most of our time cooking a bunch of delicious food together. It was awesome. I started off our awesome weekend by making our absolute favorite breakfast: Breakfast casserole. Well, sausage breakfast casserole to be exact. I've been making it for years and for some reason I have never shared the recipe! It's pretty much our "go-to" breakfast on the weekends and especially if we have company over! It's always a hit. Once you try it, I guarantee it will become a staple in your home, too!
Sausage Breakfast Casserole Recipe: {Print Recipe}
Ingredients:
1 bag frozen potatoes [diced potatoes, tator tots, potato rounds] (we love the potato rounds the most!)
1/2 cup Oil for frying (unless you're baking them!)
1 pound Jimmy Dean Regular Pork Sausage
1-1/2 cups grated cheese (I use a mixture of cheddar and monterey jack)
5 eggs
3/4 cup milk
Salt & pepper
Instructions:
Preheat oven to 425 degrees.
In a large skillet, heat oil and add potatoes. Cook for about 6-7 minutes, flip and cook for addition 5-6 minutes, or until potatoes are golden brown and crispy. Remove with slotted spoon and place on paper towels to drain. Or you can bake them according to the package's instructions.
In another skillet, crumble sausage and cook for about 6-7 minutes, or until sausage is cooked through.
Place potatoes in a 9"x13" baking dish and top with cooked sausage. Sprinkle cheese over the sausage.
In a medium bowl, whisk eggs, milk and salt and pepper. Pour evenly over the casserole.
Place in preheated oven and cook for 15-20 minutes, or until cheese is bubbly and there is no runny egg on the top of the casserole.
Serve with some yummy fresh fruit and enjoy!
This looks like a breakfast my family will go ga-ga over!
