#HolidayHelper Broccoli Bacon Casserole

Christmas is just around the corner. I mean just around the corner. Like, you can almost touch it. It's just ever so slightly out of reach, but if you really, really wanted to, you could reach out and grab it...  Since Christmas is so close, today i'm here to help you... I'm here to give you a fabulous recipe for a casserole that will bring your guests great joy this Christmas. Not only will they ask for seconds, but they might even ask for thirds... or better yet, the recipe. It's that good. Seriously! It's a recipe for Broccoli Bacon Casserole. There's broccoli, bacon and tons and tons of cheese involved, so you know it's good.

I know that for most of my recipes, I always use at least 2 or 3 items from the refrigerated section of the store and usually 1 or 2 from the frozen section! This time I purchased my cheese, bacon and sour cream from the refrigerated section and my broccoli from the frozen section! The refrigerated section is home to some of my favorite foods and is the place I go for culinary inspiration! It is the place that bacon dwells, therefore it is amazing. The frozen section is a place I go when I want to stock up on yummy veggies. I love the convenience of having a bunch of different veggies in my freezer and knowing that they will stay fresh for a long time!


The first step to this amazing casserole is cooking your broccoli. Super exciting, right? Yeah, not so much... but it's definitely an important step!


The next step might be the most important step. Yes, definitely the most important... you must fry your bacon! Fry that delicious bacon. 

Then, after you've fried your delicious bacon you'll want to cook some onions and put together your sauce. Then you just combine your cooked broccoli, bacon sauce and cover it with a bunch of delicious cheese! And more bacon... don't forget more bacon!



This is a great side dish for any holiday meal, party or potluck! Everyone loves bacon... and cheese, can't forget cheese! I hope you all have a magical Christmas full of delicious food, fun times and lots and lots of love! 




Broccoli Bacon Casserole Recipe:

Ingredients:

2 (14 ounce) packages frozen broccoli florets
16 ounce package bacon
6 tablespoons butter, divided
1/2 large onion, diced
3 tablespoons flour
1-1/2 cups sour cream
2 cups shredded sharp cheddar cheese
1/2 cup crumbled Ritz Crackers
Salt & pepper

Instructions:

Preheat oven to 350 degrees.

Cook broccoli according to package directions. Drain and set aside. Fry bacon strips until crisp, drain, crumble and set aside.  Reserve 1 tablespoon of bacon grease, place in medium skillet over medium heat along with 1 tablespoon of butter. Cook onion until soft and translucent, about 4-5 minutes. Add 3 tablespoons butter, allow butter to melt, then whisk in flour. Cook for 1 minute. Stir in sour cream and simmer for 2-3 minutes, stirring often. Season with salt and pepper.

Add broccoli florets and all but 3 tablespoons of bacon bits (set those aside). Place in lightly greased casserole dish. In a small bowl, mix together 2 tablespoons melted butter and cracker crumbs. Top casserole with shredded cheese, bacon bits and cracker crumbs. 

Bake in preheated oven for 45-55 minutes, or until casserole is bubbly and cheese is melted.

Makes about 6 cups.
