Grilling season is here! It's one of mine and hubby's favorite times of the year, even though we aren't huge fans of the temperatures that come along with it. I have never been a fan of the heat, but I have always been a fan of delicious food straight from the grill. My dad always loved to barbecue for us when I was young and I have fond memories of playing in the yard while he cooked us up our favorite thing: a bunch of chicken! My mom was always in the kitchen making the chicken marinade and the side dishes to go along with it. I'm lucky that my dear hubby also loves to man the grill and our children will grow up playing outside while he makes dinner for all of us and while I am in the kitchen making the side dishes! :)


Today i'm here to share not one, but 3 recipes with you! Yes, you read that right. This is an extra special post that I thought I should go all out for, because the main recipe features a delicious ingredient that isn't often associated with the grill, but really, really should be: Tyson's Cornish hens! I'm here to tell you that if you haven't tried grilling a cornish hen, then it's definitely time to give it a try. Add it to this Summer's bucketlist, grab your tongs and hens and head for the grill! Well, you should probably head to Walmart first, like I did, to pick up all the ingredients you need to make the delicious recipe I'm about to share with you. That would be Step #1. I found them in the little freezer section in the middle of the aisle, right next to the frozen turkey breasts! I was lucky to snag the last pack!


While you're at Walmart you're also going to want to grab some Kikkoman soy sauce so you can make the yummy Bourbon Glaze to accompany your little hens. Starting June 4th there will be a coupon on the Soy sauce bottles for $2 off when you buy the double pack of cornish hens with the Kikkoman. I love saving money! Don't you?


We were super excited to grill up something different! Not that we don't love our usual tri tip, hamburgers and carne asada, but, it was definitely fun to prepare something new!


All seasoned up and ready to hit the grill! We decided against spatchcocking the hens this time because we wanted to see if we could achieve perfectly cooked chicken without using that method... (and we did!) 



Bacon wrapped asparagus to go along with the Bourbon Glazed Cornish Hens...

...and after! This stuff is addicting. I could have probably eaten the whole bowl by myself. Unfortunately, my hubby liked it, too, so I had to share...


The cornish hens before the searing! We grilled them for 60 minutes on indirect heat, while basting them every 15 minutes with the bourbon glaze, then we seared them for a couple minutes on each side (just to get the skin where it needed to be and to give them that extra burst of flavor!) Yum.


Dinner is served! These hens were one of our favorite things we've ever grilled. I'm so glad we went outside the box as far as grilling meats go and actually tried something new and different. If not, we would have never discovered our new favorite thing to grill!

Sweet & Sticky Bourbon Glazed Cornish Hens:

Ingredients:
  • 3 (1 pound) Tyson cornish hens
  • 1/2 cup Kikkoman soy sauce
  • 1/2 cup white sugar
  • 1/4 cup molasses
  • 1/4 cup apple cider vinegar
  • 1/4 cup bourbon
  • 1/2 teaspoon pepper
Directions:
To prepare your glaze, place soy sauce, sugar, molasses, vinegar, bourbon and pepper in a small pot over medium heat. Bring to a boil and simmer until mixture has thickened slightly, about 5-6 minutes. Remove from heat.

Season hens with salt and pepper. Prepare grill for indirect heat. Cover the empty half of the grill with aluminum foil and place cornish hens on top. Cook for 45-60 minutes, basting with glaze every 15 minutes. Cook hens until juices run clear and thermometer reads 165 degrees. Remove hens from foil, place over hot side of the grill and sear for 3 minutes per side and remove. Cover tightly with foil.

Serves 3.


Bacon Wrapped Asparagus:

Ingredients:
  • 1 bundle asparagus
  • 5 slices bacon, halved lengthwise
  • Olive oil
  • Salt & pepper
Directions:

Drizzle olive oil over asparagus and season with salt and pepper. Wrap 3 asparagus stalks with one of the bacon halves. Set Aside.

Once you remove your hens from the grill, place asparagus bundles over direct heat. Cook for 15 minutes, turning every so often and making sure bacon is cooked evenly and asparagus is cooked to your liking.


Loaded Baked Potato Salad:

Ingredients:
  • 6 large red potatoes, cut into large chunks 
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded cheddar cheese
  • 1/3 cup sliced green onions
  • 6 slices cooked bacon, crumbled
  • 1 teaspoon salt
  • 3/4 teaspoon pepper
Directions:

Cook potatoes until fork tender. Drain and set aside. 

Combine sour cream, mayonnaise, salt and pepper. Set aside. Once potatoes have cooled slightly (about room temperature) place them in a large bowl, along with the cheese, green onions and bacon. Slowly stir in sour cream mixture, until potatoes are coated and all other ingredients are mixed throughout. Top with additional shredded cheese, bacon and green onions.
