Easy Crockpot Chicken Chili
So, in an effort to help my hubby and I stick to our new year's resolutions, I have been trying to prepare some "healthier" dishes. Or at least healthy compared to most of the meals I usually make. What can I say -- I like butter. A lot. And fried food. Oh, and dessert. Basically, I like unhealthy things. Let's just leave it at that...
I'm hoping that this year I can actually stick to some of my resolutions longer than a few months. It seems like the excitement usually starts to die down around then and I lose all motivation and hope. I'm completely convinced that this year is going to be different, though. As long as I can find or come up with some wonderful recipes, I'm sure I'll be fine... right?
This chicken chili recipe i'm going to share is super easy and really, really ridiculously yummy. Guess how many ingredients it has? Guess! Okay, i'll tell you...Seven! Seven ingredients is all it has... and guess what else? You just dump them all in the crockpot and let them cook all day. That's it. It's really that easy! This is starting to sound like an infomercial... But wait -- there's more!! But really, there's not... Just make the recipe and thank me later.
Crockpot Chicken Chili Recipe - {Print Recipe}
Ingredients:
2 large boneless skinless chicken breasts
1 (15 ounce) can sweet corn (drained)
1 (15 ounce) can black beans (drained)
1 (15 ounce) can chili beans (drained)
1 (10 ounce) can Ro*tel diced tomatoes & green chiles
1 (15 ounce) can tomato sauce
1 package taco seasoning
Instructions:
Place all ingredients in crockpot, mix, cover and cook on low for 8 hours.
Shred chicken and serve.
Recipe yields about 6 cups of chili.
