Cranberry Bacon Breakfast Sliders

I don't have a whole lot to say about these Cranberry Bacon Breakfast Sliders other than... they just... work. I always like throwing together fun little breakfast sandwiches and these were easy, fun and tasty! I love the combination of sweet and salty and these little cuties have it! Once the yolk pops and combines with the other flavors... it's over. Too much awesomeness! I'm a huge fan of fried eggs and runny yolk. I love, love, love the buttery deliciousness that yolk adds to pretty much any food.

So, the next time you're looking for something to satisfy your morning bacon craving and also want to get your sweet/salty fix, you can whip up a couple of these and all will be well in the world.


Cranberry Bacon Breakfast Sliders Recipe: {Print Recipe}

Ingredients:
4 King's Hawaiian Rolls
4 slices bacon
4 eggs
4 tablespoons cranberry relish, jam or jelly
Mayonnaise
4 slices cheese (swiss or monterey jack would work well)

Instructions:
In a skillet over medium heat, fry bacon until crisp. Once you remove your cooked bacon, crack eggs into skillet. Cook eggs until whites are almost completely cooked, add 2 tablespoons of water into the skillet and cover. Cook until yolks reach desired doneness. 

While eggs are cooking, lightly butter a griddle or pan and turn heat to medium. Cut each roll in half and place cut side onto griddle. Cook until crispy and brown, about 1-2 minutes.

To assemble, break bacon slices in half, and place two pieces on the bottom of each roll. Top with cheese, then egg. Spread a thin layer of mayonnaise on top of roll and spread on 1 tablespoon of cranberry relish (or jam or jelly).

Makes 4 breakfast sliders.
