#FrozenFun with Frozen Wonderland Waffle Bowls

I can say with all honesty that I have never been more excited about a Disney movie release, and neither has my daughter. I am so anxious for FROZEN the movie to come to DVD -- I feel like I have been waiting for ages!

Since my daughter has been doing extraordinarily well in school, and since she won 1st place in a school art contest, I decided to surprise her and take her to Walmart to pick up the FROZEN dolls she has been so desperately wanting! 


We were so thrilled that they had both Anna & Elsa in stock, as I have heard from several people that Elsa has been extremely hard to find! Yay Walmart! We also stumbled across a FROZEN shirt in the big girl's section! Double yay! 


Before leaving Walmart we headed to the frozen aisle to pick up some Eggo Waffles so we could make a healthy snack to celebrate the release of FROZEN on DVD on March 18th.  While we were there we also grabbed some fruit, some marshmallows and some coconut... Any ideas on what we could possibly be making?!

How about a Frozen Wonderland "Ice Cream" Waffle Bowl?! That's kind of a mouthful, but I just knew it was going to be one of the most amazing snacks ever. You know how you can make "Ice cream" using only bananas and a food processor? Well, we wanted to make a yummy fruit-only "ice cream" treat and use Eggo waffles as our bowl! So, we did!


The first step of our snack was to place our cut up fruit into the freezer. Strawberries, bananas and pineapple -- yummy. We kept it in there for about 5-6 hours.


The next step was my favorite step of all... making a sweet marshmallow Olaf to go on top of the Winter Wonderland! Marshmallows, a tootsie roll and a little chocolate was pretty much all he needed!


Next, we placed thawed Eggo waffles into muffin tins and baked them in the oven until they were nice and crisp! My daughter is now completely obsessed with Eggo waffle bowls and says she's going to request them all the time! I think I will too... they're super wonderful!


Once our fruit was all frozen, we put it in my Vitamix (I left my food processor at my Mother-in-Law's house... oops!) and made "Ice cream" for our bowls! My daughter wore her new FROZEN shirt (which she would live in if I let her) and Anna & Elsa were there to help along the way, of course. After all, we were building a snowman and they LOVE to build snowmen! 

One super cute thing about my daughter is that she loves bringing her toys into the kitchen to "instruct" us on how to make our recipes. Although they usually just ask me "Okay next... what do you think you need to do?" Which is not exactly instructing... But, I still appreciate their willingness to help.


We topped our special snacks with a mound of shredded coconut "snow" and placed our adorable Olaf on top of his FROZEN Wonderland! 



Doesn't he look happy? Doesn't she look happy? They're both pretty happy. Although, I don't think Olaf knows what's about to happen to him...


My daughter had so much fun making this FROZEN Wonderland snack and went on and on about how happy Anna & Elsa were to have their friend Olaf to hang out with for a while! Well, that was, until she decided to eat him... Oh, and another thing I learned while doing this recipe was that my fridge pictures need some serious rearranging. So, there it is...

FROZEN Wonderland "Ice Cream" Waffle Bowls:
(Makes 4 Bowls)


Ingredients:
  • 4 Eggo Waffles (we used buttermilk!), thawed
  • 2 bananas, cut into 2" pieces
  • 1/2 cup fresh strawberries, cut in half
  • 3/4 cup pineapple chunks
  • 1 cup shredded coconut


For Olaf:
  • 12 large marshmallows
  • 8 mini marshmallows
  • 2 mini tootsie rolls
  • 20 mini chocolate chips
  • 1 cup white chocolate melting disks
  • 4 black chocolate melting disks (or you can just use dark chocolate melting disks)
  • 1-2 pieces dried mango (or something orange and nose-like, like those orange slice candies)
  • 4 Lollipop sticks
  • Wooden skewer and/or toothpicks
  • Wax or parchment paper
Instructions:

Spread fruit on a baking sheet or on aluminum foil and place in the freezer for about 6 hours.

Preheat oven to 400 degrees.

Meanwhile, melt your white chocolate melting disks in a microwave-safe bowl and get your "Olaf" station ready with all ingredients and tools.

To assemble Olaf, first take one of your large marshmallows and squish it into an oval shape. Place 2 large, round, marshmallows on lollipop stick and the oval marshmallow on the top (make sure to turn them so the flat sides are facing you. Using melted white chocolate and a toothpick, "glue" on 2 mini marshmallow feet, adhere mini chocolate chip "buttons" to Olaf's stomach (remember, he only has 1 button on the middle section!) and 2 more mini chocolate chips as eyes. Use the toothpick and white chocolate to trace around the inside of the chocolate chip "eyes" and make them look more eye-like. 

Cut off about 1/3 of one mini tootsie roll and roll it between your fingers to get it soft and smooth. Now, cut that in half and use each piece to form an arm. Cut off another tiny piece of tootsie roll and roll it between your fingers to make his "hair." Using a wooden skewer, poke holes in the sides of the middle (large) marshmallow, put a tiny bit of white chocolate in the holes and push tootsie roll arms inside. Do the same with the top of his head and place the "hair" in the hole. Lay flat on parchment or wax paper.

Cut black (or dark chocolate) melting disk into the shape of a mouth and 2 eye brows. Using white chocolate and a toothpick, adhere the mouth to Olaf's face, "paint" on his little teeth, and attach his eyebrows. 

Finally, cut a triangular-shaped nose from your dried mango (or whatever you're using) and use the white chocolate to stick place it on Olaf's face. Allow to dry.

For the waffle bowls, push thawed Eggo waffles into muffin cups to form a "bowl" shape. Place in preheated oven and bake for 5-8 minutes, or until waffles are crispy and golden! Remove from oven and allow to cool. 

For "ice cream," place frozen fruit into food processor or blender and mix until it forms the consistency of soft serve ice cream. 

Spoon "ice cream" into cooled waffle bowls, sprinkle with coconut and top with marshmallow Olaf!
