Blueberry & Peach Crisp

I haven't baked anything in reeeeally, really long time. I know, I know... That's bad! It seems like now that the baby is here it's been a lot harder to find time for baking... wonder why? Plus, he loves to be carried around in one of those "mommy pouches," and I'm not so sure that dangling a 3-month-old baby over a preheated oven while I put in my baking dish is such a good idea, do you? 

Yesterday was one of those amazing days... You know the ones... The ones where you feel this overwhelming amount of energy and drive. I don't know where it came from, but I'll take it. I cleaned my kitchen up (it's already messy again, of course) and grabbed a bunch of peaches and blueberries and went to work creating something delicious! The end result was more far more wonderful than I, my husband or my daughter could have imagined! If you're a fan of crumble topping, you know, streusel, the yummy oaty bunches of sweet, buttery deliciousness... Then you will love this recipe. The crunchy, crumbly stuff is always my favorite part of a dessert and this one is full of it! Woo! Cruchy, crumbly fans you can throw your hands up and squeal with joy, because this dessert is for you!


Blueberry & Peach Crisp Recipe: {Print Recipe}

Ingredients:
  • 6-7 fresh peaches (sliced)
  • 1 cup fresh blueberries
  • 2 tablespoons flour
  • 1/4 cup white sugar
Topping:
  • 1-1/2 sticks butter (12 tablespoons)
  • 2 cups all purpose flour
  • 1 cup rolled oats
  • 3/4 teaspoon baking soda
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 teaspoon cinnamon
  • Pinch of salt
Instructions:
Preheat oven to 375 degrees.

In a medium mixing bowl, combine flour, sugars, baking soda, cinnamon and salt using a fork or pastry cutter. Cut butter into smaller pieces and add to mixture. Mix well and combine until butter is evenly distributed.

Place 1/2 of the crumble mixture in a lightly greased 9"x13" baking dish. 

In a large bowl, add peaches, blueberries, flour and sugar. Toss to coat. Pour fruit in the baking dish over the crumble mixture. Top with remaining crumble mixture.

Bake for 45-50 minutes or until top is golden brown and everything is nice and bubbly.
